peanut butter fudge

Easy peanut butter fudge that is soo good .enjoy :)

PEANUT BUTTER FUDGE 1/2 cup unsalted butter (see my comments below)
1/2 cup natural peanut butter
2 ounces cream cheese, softened
1 cup granular Splenda or equivalent liquid Splenda
2/3 cup whey protein powder, vanilla flavor, 2 scoops Melt the butter and peanut butter together in the microwave on HIGH for 1-2 minutes; whisk well. Whisk in the cream cheese until well blended and smooth. Whisk in the Splenda then the whey protein powder and blend well. Line a 7 x 5" baking dish with wax paper or nonstick foil. Spread the fudge mixture in the pan and chill or freeze until set. Cut into 20 squares. Store in the refrigerator or freeze. Makes 20 pieces Can be frozen :)

blackberry low carb ice cream

hoping to try this low carb treat soon
will have too makea few adjustments,not able to find heavy cream here for some reason

Wild Blackberry and Coconut Ice Milk

14 ounces coconut milk — lite1 cup skim milk3/4 cup splenda1 tablespoon lemon zest1/2 teaspoon rum extract1 cup blackberries — wild, washed and drained
Heat all ingredients on stove top until about 170 degrees or just about to boil. Don’t allow to boil. Press down on the berries to extract juice into the milk and then cool in the refrigerator about 1 hour or more.
Strain out seeds and place milk into an ice cream maker. Follow manufacturers directions. Better if eaten immediately rather than trying to store it for later.

question about coconut milk

i have a question about coconut milk,i found a brand of cocnut milk that has one carb per tsp is that ok in my coffee, i have not been able to find heavy cream at my grocery,thanks :)

one of my favorite hot tea's


sharing with you one of my favorite hot tea's i just discovered it today at Big Lots for only $2.00 a box,it has a light flavor with a hint of cocoa and cinnamon so good,

sweet and sour green beans

these are so of the yummiest green beans ever, you can also replace the sugar in the beans with splenda ,they are great with your favorite meat
i like to prepare mine in a cast iron skillett :)
so delish you will never like any other green beans again
i use the french style green beans from Publix they are 97 cents a bag

Sweet And Sour Green Beans
1/2 package bacon (6 or 7 slices)
1/2 onion, chopped
32 ounces french style green beans (or other green beans)
2 T vinegar
2 T sugar /or splenda
salt and pepper to taste
Cut bacon into one inch segments. Place bacon and onions in skillet. Cook over medium heat until browned, stirring often. Remove to plate. Add beans to bacon grease and continue cooking over medium heat until they are to desired tenderness. Add vinegar and sugar. Stir. Add bacon and onions back and let simmer a few minutes, stirring often. Salt and pepper to taste.

OVEN FRIED BACON

Preheat oven to 400 degrees. Place desired number strips of bacon on broiler pan.
Cook for 10 minutes depending upon the degree of crispness desired. Prepared in this way, turning and draining are both unnecessary.

this is such a easy quick cake,that is flourless

3-MINUTE FLOURLESS LOW-CARB CHOCOLATE CAKE1 TBS Butter, microwave for 10 seconds to soften1 Egg1 TBS Da Vinci SF Vanilla syrup2 TBS Splenda1 TBS heavy creamPinch salt2 TBS cocoa powder (Hershey' s is rather High carb. Try some from Aldi or Save A Lot. It's much lower in carbohydrate count.)Mix together all the ingredients until it is as smooth as possible. It should look similar to cake batter at this point. Microwave for 1 minute. For the special treat, add 1 TBS of whipped heavy cream (sweetened with Splenda). Eat this while warm.Makes 1 serving

yummy low carb chicken pot pie

looking for a low carb chicken pot pie,then give it a try,a true Southern staple with a twist
Enjoy :)

1 cup chicken broth (preferably homemade--it's so much better!)¼ cup white wine
¼ heavy cream
1 lb boneless chicken breasts or thighs
½ cup chopped celery
½ cup chopped chives or scallions
1/2 cup chopped cauliflower,
cooked1 tablespoon butter or olive oil½ cup freshly chopped parsley1 tablespoon freshly chopped tarragon freshly ground pepper to taste(you can thicken the sauce with a tiny bit of guar gum or thickenthin if you like; I don’t bother.)crust
:½ cup almond flour
1 egg4 tablespoons butter1/8 teaspoon saltChicken
:Gently simmer the chicken parts in the broth until cooked through (about 15 minutes). Remove chicken and shred it; return to broth. Add cream and heat gently.Saute the veggies in 1 tablespoon butter for a few minutes until heated through. Add ¼ cup white wine and simmer on high heat for a minute, until reduced by half. Add to chicken and broth; add herbs. Put in 8 or 9 inch
baking dish.For crust, beat the egg and salt until blended. Cut the butter into the almond flour until it looks like small crumbs. Gently mix the egg mixture into the butter/flour mixture. Drop onto the chicken by spoonfuls.Bake in preheated 375 oven until crust is browned on top, and chicken mixture is bubbly.

low carb chocolate coconut pudding


wanted something for a snack this afternoon

and came up with this recipe

Chocolate low carb pudding

1/2 cup coconut milk,i use roland lite coconut milk

1 egg

about 3 tablespoons of hershey special dark cocoa power

I use the Aldi brand it has less carbs

1 tsp of vanilla

and 4 packets of splenda,adjust the sweetness to your taste

Cook the milk and egg on the stove on medium heat till warm,

then add the cocoa powder,vanilla ,and splenda

continue to cook until desired thickness and let cool in the fridge for several hours

then enjoy :)

this made such a sweet chocolate pudding
Note for some added texture ,toast some unsweetned coconut and sprinkle on top

this morning,i decided to try something in my coffee,lite coconut milk,and it has only 1 carb for 2 tsp and no sugar,so good,i think i will try this again in my coffee
The brand i used was Roland lite Coconut milk
Soo good with a nice coconut flavor :)

was wanting to make something quick for lunch tomorrow,these are pretty yummy,with a side salad,tell me what you think about them,they are a lot like salmon patties,but much lower in carbs ..Have a great Monday everyone

Low carb tuna patties
can tuna
1 Tbs mayonnaise
1 egg
2 Tbs Parmesan cheese
2 Tbs flax meal
sprinkle of garlic powder
sprinkle of onion powder
dash of salt
Drain tuna, blend all ingredients in a medium sized bowl and form into patties. Fry in oil until brown on edges.
I like to make extra for leftovers. I get 3 nice sized patties out of 1 can of tuna.
For each patty:
calories = 156.3
fat = 8.3 g
protein = 18.7 g
carbs = 1.7 g
fiber = 1.3 g
net carbs = .4 g

Looking for a quick breakfast or evening snack,try these yummy low carb cream cheese muffin's


Cream Cheese Muffins


2 8oz. pks. philadelphia cream cheese

1/2 cup sweetener (I use spenda)

2 eggs

1/2 tsp. vanilla

Soften cream cheese about 40 seconds in microwave. Add other ingredients. Beat with mixer till smooth. Pour into 12 muffin pans lined with the papers. Bake at 350 for 20 min.

Note if you want to make these extra yummy add just a dollop of sugar free strawberry jam after they cool .Enjoy

Fried dill pickles ,a true Southern favorite,this time made with grated parmesean cheese,instead of flour for that Low carber in your life, soo easy and fun to make.Enjoy :)


Dill Pickle chips

One Egg

1'2 cup parmesean cheese

enough oil to fry pickles in

Fry at 350 in your deep fat fryer

until a nice golden brown

(Note) I'm not sure exactly on the measurments as i was trying to create a evening snack that was quick to make and that was also low in carbs

One of my favorite dinner sides dishes is mashed cauliflower,soo cheesy and tasty,makes a great side with some grilled chicken, enjoy everyone :)

Mashed Cauliflower

Ingredients:
1 head of cauliflower, chopped
2 cups of chicken stock
2 tablespoons of butter
2 tablespoons of milk
1/2 tablespoon of garlic powder, roughly
1/2 tablespoon parsley, minced
1 cup cheddar cheese
Directions:
~Add the cauliflower and chicken stock and bring to a boil on the stove top. Cover and reduce heat to a simmer. Simmer for 20 minutes or until the cauliflower is soft.
~Drain the cauliflower and add it back to the pot. Add the butter, milk and garlic powder. Mash with a potato masher. Add cheese and serve immediately.
